Macaroni and Cheese

1 recipe will fill large glass dish
double recipe will fill large white casserole

Ingredients

  • 10 oz macaroni (by weight)
  • 8 oz cheese
  • 2 oz flour
  • 3 oz butter
  • 1 1/2 pints milk (1 1/2 cups water from macaroni + 1 can evaporated milk )
  • 1 1/2 tsp dry mustard
  • 3/4 pint of macaroni (12 oz macaroni water)
  • 1 onion finely chopped
  • pepper & salt

Directions

  1. Grease pyrex dish

  2. Cook macaroni in salted water, drain, keeping both sets of water aside from recipe

  3. Add onion to macaroni to marinate

  4. Mix flour and mustard together

  5. Heat evaporated milk, then add 1 1/2 cups macaroni water

  6. Make white sauce:

  7. Melt butter in pot and remove from stove

  8. Add mustard and flour mixture and stir briskly

  9. Put back on stove on low heat-stir while cooking and bring to a boil

  10. Remove from stove and add hot milk slowly

  11. Thicken sauce on medium heat, stirring constantly

  12. Add in ground pepper

  13. When quite thick, add cheese in, a bit at a time

  14. Add macaroni water as it thickens

  15. When sauce is reasonably thickened, add to macaroni mixture, put in greased pyrex dish

  16. Sprinkle with cheese

  17. Bake at 350 for 45 mins – 1 hour
