Rum Sauce for Plantains

Ingredients

  • Ripe plantains
  • 1 cup brown sugar
  • 1 tsp grated lemon rind
  • 1 1/2 cups boiling water
  • 1 tbsp. butter
  • 1 1/2 tbsp. corn starch
  • 3 tbsp. lemon juice
  • 1/4 rum ( can use more)

Directions

  1. Combine sugar, lemon rind and boiling water

  2. Add butter

  3. Heat to boil

  4. Mix cornstarch with lemln juice and add to mixture

  5. Cook 8 mins until it thickens

  6. Remove from heat and add rum and salt

  7. Add cooked (boiled or steamed plantains) to mixture and put on heat for 5 mins to absorb some of the mixture. Leave for 5 hours and then warm and serve
