Yam Pie ( Souffle)

Ingredients

  • 2 oz butter
  • 1/2 lb boiled yam
  • 2 eggs separated & beaten
  • Salt & pepper
  • 1/2 cup milk
  • 2 oz cheese
  • 1/2 tsp grated onion
  • 2 egg whites

Directions

  1. Heat milk, melt butter and add to hot milk

  2. Crush yam and add to liquid

  3. Stir in cheese, salt, pepper onion and cook for 3 minutes

  4. Remove from heat and add beaten egg yolks

  5. Beat egg whites stiff and fold into mixture

  6. Put in greased pie dish

  7. Sprinkle with cheese

  8. Bake 350 until brown & fluffy
