Twice Baked Breakfast Potato

Ingredients

  • 4 lg baking potatoes
  • 1 tbsp butter
  • 4 eggs, beaten
  • 10 oz bulk sausage
  • 1/4 cup sour cream
  • 8 bacon strips, cooked & crumbled
  • 3/4 cup shredded chedder cheese, divided
  • 1 tbsp minced parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. Bake potatoes in microwave for 15-17mins or until tender.

  2. In skillet, melt better and cook eggs, set aside. Then cook sausage until brown. Drain and set aside.

  3. Cut potatoes in half long ways and scoop out middle. In a bowl, mix pulp and sour cream. Stir in bacon, 1/2 cup cheese, parsley, salt, pepper, eggs and sausage. Spoon into shells.

  4. Bake for 12-15 mins at 375 degrees. Sprinkle with cheese.
