Garden frittata

Ingredients

  • 8 eggs whisked
  • 1 onion chopped
  • 2 handfuls chard or spinach chopped
  • thyme
  • oregano
  • 1 cup parmesan cheese
  • 6 tomatoes sliced
  • bacon
  • potatoes grated and fried

Directions

  1. Preheat the oven to 350 degrees. Generously butter a glass pie pan. Cook the bacon. Saute the onion for about 5 minutes. Add the chard, and herbs to the pan. Saute until tender. Mix into the whisked eggs with the Parmesan cheese. Pour into the pie pan and top with the sliced tomatoes. Bake for 30 minutes. Serve with sour cream, salsa, or sliced avocado.
