Gazpacho

Ingredients

  • Handful of good-quality stale bread, torn into pieces
  • red wine vinegar
  • 1 cucumber, deseeded
  • 1 red pepper, deseeded
  • 1 yellow pepper, deseeded
  • 1/2 small white onion
  • 6 plum tomatoes, deseeded and quartered
  • extra-virgin olive oil
  • few fresh chives

Directions

  1. Put the bread in a bowl and sprinkle with 2 tablespoons red wine vinegar.

  2. Finely dice a little of the cucumber and set aside – this will garnish the soup. Peel and roughly chop the rest of the cucumber. Chop the peppers and onion and put in a food processor, along with the tomatoes, cucumber and bread. Whizz until smooth. With the food processor still running on slow, drizzle in a few glugs of olive oil.

  3. Empty the soup into a large bowl, taste and season well with salt and freshly ground black pepper. Add some cold water if it’s too thick. Chill very well before serving. Serve scattered with the reserved cucumber, the chives and an extra drizzle of olive oil.
