Thai Hot and Sour Soup

Ingredients

  • 6 cups chicken broth
  • 1/2 c sliced onion
  • 2 tsp grated ginger root
  • 4 shitake mushrooms, sliced
  • 1 c diced tofu
  • 3 tbs fish sauce or soy sauce
  • 2 tbs fresh lime juice
  • 1 tsp Asian chili sauce
  • 12 shrimp, shelled and deveined
  • 2 eggs, beaten
  • 1/4 cup chopped fresh coriander

Directions

  1. Place broth, onion, gingerroot,and mushrooms in pot. Bring to boil and simmer for 5 minutes or until vegetables are tender-crisp. Add tofu and cook for 1 minutes. Stir in fish sauce, lime juice and chili sauce; simmer for 5 minutes. Add shrimp; bring to boil. Slowly stir in beaten eggs with fork. When eggs form threads, remove from heat and add coriander.
