Garlic And Herb Yogurt Cheese

Ingredients

  • 8 garlic cloves, unpeeled
  • 1/2 teaspoon fresh lemon juice
  • 1 1/2 cups yogurt cheese (see recipe)
  • 1 scallion, thinly sliced
  • 2 teaspoons chopped fresh oregano, or 3/4 teaspoon dried
  • 1/4 teaspoon salt

Directions

  1. eheat the oven or toaster oven to 400. Wrap the garlic in foil and roast until soft, about 30 minutes. Unwrap the foil and let the garlic cool slightly, about 5 minutes. Into a medium bowl, squeeze the garlic from the skins; add the lemon juice and blend well. Then add the yogurt cheese, scallion, oregano, and salt; stir to combine.
