Mom’s Asparagus Casserole

As kids my sisters and I always looked forward to this on the holidays and we didn’t even like asparagus! So yummy!

Ingredients

  • 1 Stick of butter or margarine
  • 1 Tube of ritz cracker crumbs
  • 4 tbs. of butter or margarine
  • 1 and a half cups of milk
  • Salt and pepper to taste (a little)
  • 1 package of sharp cheddar cheese (10 oz.)
  • 4 cans of asparagus spears drained
  • 1/2 cup of sliced almonds (optional)
  • 3 tbs. (ask mom for sure b/c recipe got smeared) of flour

Directions

  1. Melt stick of butter and blend with cracker crumbs

  2. Line bottom of shallow oblong (baking dish) 9×13 with half of cracker mixture

  3. Arrange asparagus spears in even layer.

  4. Make sauce with butter, flour, cheese, milk and salt and pepper.

  5. Melt in a sauce pan slowly. Pour over asparagus.

  6. Sprinkle almonds on top.

  7. Top with other half of crumb mixture.

  8. Bake 12 minutes at 450

  9. *This can be prepared 2 or 3 days ahead of time.
