Crispy-Crumb Eggs

Serves 4 people

Ingredients

  • 1/2 lb sausage or ham
  • 1 Cup soft bread crumbs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • dash pepper
  • 5 well beaten eggs

Directions

  1. Fry sausage until crisp; remove from pan. Remove all but 2 Tablespoons drippings. Add soft bread crumbs to drippings. Heat until crumbs are crisp and brown; remove crumbs.

  2. Add milk and seasonings to eggs; scramble in sausage drippings. When nearly set, add crumbs and sausage.
