Apple-Liver Pate

Ingredients

  • 2 tablespoons margarine or butter
  • 1 medium onion, chopped about 1/2 cup
  • 1 clove garlic, finely chopped
  • 1/4 cup apple flavored brandy or chicken broth
  • 1 medium cooking apple, pared and coarsely chopped
  • 1 pound chicken livers, cut into fourths
  • 1 1/2 teaspoon chopped fresh or 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons margarine or butter, softened

Directions

  1. Heat 2 tablespoons margarine in 10 inch skillet over medium heat. Cook onion and garlic in margarine about 2 minutes. Stir in brandy, apple and chicken livers. Cover and simmer 12 to 15 minutes, or until apples are soft and livers are no longer pink in center. Cool about 15 minutes. Place liver mixture in blender or food processor. Add remaining ingredients. Cover and blend on high speed about 1 minute, stopping blender occasionally to scrape sides, or process, 30 seconds or until smooth. Pour into crock or bowl. Cover and refrigerate at least 4 hours. Garnish with fresh thyme and serve with apple slices and assorted crackers if desired.
