Salmon Loaf or Patties

Tasty way to use left over salmon

Serves 4 people

Ingredients

  • 1 can salmon or 2 cups separated cooked salmon
  • 1 cup soft bread crumbs
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 cup minced onion or 1/8 teaspoon onion salt
  • 1 tablespoon parsley, optional
  • 1 tablespoon lemon juice

Directions

  1. Remove bones from fish. Combine seasonings, eggs and milk with crumbs. Combine mixture with fish and mold into loaf pan. If mixture isn’t moist enough, add more milk. Bake for 40-45 minutes at 350 degrees.

  2. To makd patties, shape meat mixture into round patties about 4 inches across and 1/2 inch thick. Dip into a beaten egg and dredge in dry bread or cracker crumbs. Cook in a fry pan in hot oil until heated thoroughly enough to hold their shape.

  3. Serve with lemon juice.
