Sally’s Meatloaf

I didn’t have everything I needed to make an existing meatloaf recipe, so I created this one using ingredients I had on hand at the time.

Ingredients

  • 1 egg
  • 1 envelope Lipton's onion soup
  • 2 T. milk
  • 1/4 C. ketchup
  • 1 T. Worcestershire
  • 1/2 t. pepper
  • 1 lb. ground beef
  • 3/4 C. Ritz cracker crumbs (18-20 crackers)

Directions

  1. Preheat oven to 350°. Lightly spray loaf pan with cooking spray

  2. Mix egg, soup mix, ketchup, Worcestershire, milk and pepper in a bowl. Add meat and cracker crumbs and mix well.

  3. Put into prepared loaf pan

  4. Bake 1 hour. Let rest for a few minutes before slicing. Serve with barbeque sauce or gravy. Leftovers make excellent sandwiches.

  5. This recipe is perfect for two people. It could be doubled for a family.
