Fried Oyster Pie

Ingredients

  • pastry for 1 pie crust pie
  • 6 large, fresh or quick frozen oysters or 12 small ones
  • 1/4 teaspoon salt
  • 2 teaspoons butter or margarine
  • fat for deep frying

Directions

  1. Set a frying kettle on a warm part of the range; fill it half full of fat or shortening and let it slowly heat to 380, or hot enough to brown a 1 inch cube of bread in 40 seconds to 55 seconds. Roll out the pastry on a lightly floured board and cut it into 6 squares. Place 1 large or 2 small oysters on 1 side of each square. Sprinkle with salt and dot with butter or margarine, then fold over the dough to make triangles. Pinch the edges together to seal tightly. Fry 3 to 5 minutes or until the pies are lightly browned. Drain on paper towels and serve.
