Pineapple Pound Cake

Ingredients

  • 1 c (8 oz) crushed pineapple in own juices
  • 1/2 lb butter
  • 1/2 c shortening
  • 3 c sugar
  • 5 eggs
  • 3 c sifted flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 c milk (room temp)
  • 1 tbsp vanilla extract

Directions

  1. Thoroughly drain pineapple. (reserve juices)

  2. Cream together butter, shortening, & sugar until light & fluffy.

  3. Add eggs one at a time.

  4. Beat well after each addition.

  5. Sift together flour, baking powder, & salt.

  6. Add alternately with milk until well blended.

  7. Add vanilla & lemon extract.

  8. Fold in fruit.

  9. Pour batter into greased & floured 9×10 inch tube pan.

  10. Place in cold oven & bake at 350 degrees.

  11. Cool on rack.

  12. Remove from pan & serve.
