Peanut Brittle

Ingredients

  • 2 c granulated sugar
  • 1 c light corn syrup
  • 1 c water
  • 2 c raw Spanish peanuts
  • 1 tbsp butter
  • 1 tsp baking soda
  • 3/4 tsp salt

Directions

  1. Heat & stir sugar, syrup, & water in a heavy 3 quart sauce pan until sugar dissolves.

  2. Cook over medium heat to a soft boil stage. (234 degrees)

  3. Add nuts & salt & cook to hard crack stage. (305 degrees)

  4. Stir often.

  5. Remove from heat & quickly stir in butter & baking soda.

  6. Pour at once onto 2 well buttered 15 1/2 × 10 1/2 × 1 inch pans while spreading with a spatula.
