Fermented Salsa

Ingredients

  • 4 tomatoes seeded, peeled & diced
  • 2 onions finely chopped
  • 3/4 cup chopped chillis
  • 6-8 cloves of garlic finely chopped
  • bunch of coriander
  • 1 tsp oregano
  • juice of 2 lemons
  • 1 tblsp sea salt
  • 4 tblsp whey (see recipe)
  • 1/4 cup filtered water

Directions

  1. Mix everything together in a bowl.

  2. Place in a mason jar and press down so the liquid fully covers the mixture.

  3. Make sure there is at least an inch of air at the top.

  4. Close and leave on the counter for 2 days then refrigerate as is for a very chunky salsa or blend/partially blend then refrigerate for a smoother salsa.
