Watercress Soup

Ingredients

  • 2 medium onions, diced
  • 3 tblsp butter
  • 1 litre chicken stock
  • 2 potatoes, peeled & diced
  • 2 bunches of watercress
  • sea salt
  • cream or creme fraiche

Directions

  1. Heat butter in saucepan and fry onion until soft.

  2. Add potatoes & cook for a few minutes.

  3. Add the stock, bring to the boil & simmer for about 30 mins.

  4. Add watercress and wilt for about 5mins.

  5. Remove from heat and cool slightly.

  6. Blend until smooth & add cream and season to taste.
