Lamb Mince

Ingredients

  • 400g minced lamb
  • 1 onion, finely diced
  • 1 large carrot, diced
  • 1/2 swede, diced
  • 1 large leek, diced
  • 1/2 green cabbage, stems removed & shredded
  • 2 cups chicken stock
  • 1/2 tblsp arrowroot powder
  • 1 tblsp dried mint
  • salt & pepper
  • Any other vegetables you want to add

Directions

  1. Heat fat in a casserole pot on the stove top.

  2. Fry lamb & onion until browned.

  3. Add carrot & swede & cook for 5 mins, adding a little water if it begins to stick.

  4. Add leeks & cabbage & cook for a further 5 mins.

  5. Add mint & a pinch of salt & stir well.

  6. Add stock & cook covered for 15 mins or until vegetables are cooked.

  7. Mix arrowroot with a small amount of water & add to mince to thicken.

  8. Season to taste & add a little water if to dry.
