Raspberry and White Chocolate Muffins

Almost like a cup-cake and quick to make

Cook time: 20 minutes
Serves 15 people

Ingredients

  • 2 1/2 C self raising flour
  • 100 g butter, chopped
  • 1 C caster sugar
  • 1 C milk
  • 1 egg, lightly beaten
  • 1 C raspberries, fresh or frozen
  • 1/2 C white chocolate pieces

Directions

  1. Rub butter into flour, combining well.

  2. Add remaining ingredients, mixing until just moistened.

  3. Spoon into greased or paper lined muffin tins.

  4. Bake at 190oC approx 20 minutes.

  5. Stand 5 minutes before turning onto rack to cool.

  6. Dust with icing sugar to serve.
