Banana Cream Pie

Ingredients

  • 1 refrigerated pie crust
  • 2 to 3 ripe bananas into 1/4 inch pieces
  • 2 c vanilla pudding
  • 1 c heavy (or whipping) cream whipped to a soft peak
  • chocolate shavings for garnish

Directions

  1. Place the pie crust dough in a 9 inch pie plate.

  2. Prick the dough several times with a fork.

  3. Refrigerate for 10 minutes.

  4. Line the dough with foil tightly fitting it into the edge & up the side.

  5. Fill with pie weights or uncooked rice and bake at 400 degrees.

  6. Remove foil & pie weights half way thru & bake until golden.

  7. Let stand until cool.

  8. Line the bottom of the pie shell with the bananas.

  9. Spoon the pudding over the bananas & smooth to cover.

  10. Spread a layer of the whipped cream on top & garnish with chocolate shavings.

  11. Serve immediately or refrigerate for up to 2 hrs but no longer.
