Flourless chocolate cupcakes

Ingredients

  • 85g semi sweet chocolate chips or 60-65% dark chocolate, 4 tbsp butter, 1/3 cup sugar, 2 medium eggs, 1/3 cup unsweetened cocoa, 1/2 tsp vanilla, pinch salt, 1/4 tsp coffee granules. Filling: caramel. Frosting: 141g chocolate chips and 141g heavy cream.

Directions

  1. Melt chocolate and butter on low till smooth. Preheat oven to 165 degrees. Line muffin tin with paper liners. Add brown sugar to chocolate followed by the eggs one at a time mixing well between each addition. Add salt. Sift in cocoa and coffee and whisk till combined. Finally add vanilla. Bake for 15 minutes.

  2. frosting: put chocolate in a bowl. heat cream in pan for 3.5 min till simmering. Pour cream over chocolate and let stand for 2 min. Mix well till chocolate is melted. Put in fridge for one hour. Whip mixture till light and fluffy and frost cupcakes.
