Vegetable Medley

Ingredients

  • Any mix of the below:
  • 1/3 C fennel (finely chopped)
  • 3 stalks celery (finely sliced)
  • 5 stalks asparagus (cut into 1" pieces)
  • 2 tomatoes (diced) or cherry tomatoes (sliced)
  • 1 red bell pepper (cut into fine slivers)
  • 1/3 C broccoli (finely chopped)
  • 1/3 C fresh basil (finely chopped)
  • 1/3 C parsley (finely chopped)
  • Sauce:
  • 1 tomato (or a big handful of cherry tomatoes)
  • 1/8 C olive oil
  • 1/4 C water
  • 2 T lemon juice
  • 1 T fresh ginger
  • 2 t black paper
  • 1 t oregano

Directions

  1. Mix veggies in casserole dish.

  2. Blend sauce and pour over veggies. Mix.

  3. Put casserole in deydrater. 145oF for 1-2 hours.

  4. Serve over zucchini pasta (optional) or as is.
