Nacho Taco Salad

Serves 6 people

Ingredients

  • 11/2 lbs ground beef
  • 1 cup onions, chopped
  • 1 jalapeño pepper, seeded and minced
  • 2 tsp garlic, minced
  • 1 cup canned corn, drained
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup bell pepper
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 2 cups grape tomatoes, quartered
  • 1/3 cup ketchup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • cheese
  • lettuce
  • blue corn chips
  • sour cream and salsa *optional*

Directions

  1. cook beef, onion jalapeño pepper and garlic over medium-high heat in a non-stick pan until beef is no longer pink

  2. drain fat

  3. add chili powder and cumin – cook 1 min

  4. add the rest – cook 2 minutes
