Smoked Salmon, Cream Cheese Pinwheel Scones

Very tasty straight from the oven, or cold to take on a picnic or in school lunches!!

Serves 8 people

Ingredients

  • 3 C self raising flour
  • 1/2 t salt
  • 50 g butter
  • 1/2 C parmesan cheese, grated
  • 1 1/2 C milk
  • 2250 g cream cheese
  • 2 T capers, roughly chopped
  • 1 C rocket or spinach, roughly chopped
  • 200 g hot-smoked salmon
  • extra grated parmesan (optional)

Directions

  1. Sift flour & salt into bowl.

  2. Rub in butter until mixture resembles breadcrumbs.

  3. Stir in cheese and enough milk to make a firm, moist dough.

  4. Turn dough onto floured surface; roll into 30cm square.

  5. Mix cream cheese and capers until soft; spread over the dough.

  6. Spread over the rocket followed by salmon.

  7. Roll up to form a log; cut into 8 rounds.

  8. Place on lined baking tray; bake at 210oC approx 20-25 minutes.
