Smoked Salmon, Cream Cheese Savoury Pinwheel Scones

Very tasty hot, straight from the oven, or
nice cold to take on a picnic or for kids school lunches

Serves 8 people

Ingredients

  • 3 C self raising flour
  • 1/2 t salt
  • 50 g butter
  • 1/2 C parmesan cheese, grated
  • 1 1/2 C milk
  • 250 g cream cheese
  • 2 T capers, roughly chopped
  • 1 C rocket or spinach, roughly chopped
  • 200g hot-smoked salmon

Directions

  1. Sift four and salt into bowl; rub in butter until mixture resembles breadcrumbs.

  2. Stir in cheese and enough milk to make firm, moist dough.

  3. Turn dough onto floured board and roll into 30cm square.

  4. Mix cream cheese and capers together until soft; spread over dough.

  5. Sprinkle over rocket, followed by salmon.

  6. Roll up to form a log; cut into 8 rounds and place on lined baking tray.

  7. Bake at 210oC approx 20-25 minutes.
