Bircher Muesli with Mixed Nuts

Delicious and healthy breakfast

Serves 6 people

Ingredients

  • 2 C rolled oats
  • 1/3 C dried apricots, sliced
  • 2 T sultanas
  • 1 1/2 C apple juice
  • 50 g raw pecans, chopped
  • 50 g raw macadamias, chopped
  • 50 g raw cashews, chopped
  • 1 medium red apple, thinly sliced
  • 1/2 C natural yoghurt

Directions

  1. Place oats and dried fruit in bowl; pour over apple juice and refrigerate, covered, overnight.

  2. Toast nuts; add to softened oat mixture along with apple and yoghurt.

  3. Will keep in refrigerator 2-3 days; can be served warm if liked.
