Christmas Cake

Nice even when made at last minute

Serves 16 people

Ingredients

  • 1 Kg mixed dried fruit
  • 2 C water
  • 2 C brown sugar
  • 250 g butter
  • 1 T golden syrup
  • 1/2 t salt
  • 1 t baking soda
  • 3 C flour
  • 2 t baking powder
  • 1 t mixed spice
  • 3 eggs, lightly beaten
  • vanilla and brandy essence to taste

Directions

  1. Place first seven ingredients into saucepan; bring to boil and simmer 10 minutes. Cool.

  2. Add flour, baking powder and spice sifted, along with eggs and essences.

  3. Bake in well lined 20 – 25cm baking tin approx 2 hours at 160oC until skewer inserted into middle of cake comes out clean.
