Jax’s Doris Blush Cake

Nice as dessert or cake with coffee

Serves 12 people

Ingredients

  • 200g butter, softened
  • 1 C caster sugar
  • 3 eggs
  • 1 t vanilla essence
  • 2 C flour
  • 2 t baking powder
  • 70 g ground almonds
  • 1/2 C sour cream, at room temperature
  • 1/2 C milk, at toom temperature
  • 850g can Black Doris plums, drained and stones removed

Directions

  1. Cream butter and sugar, add eggs singly, beating well after each addition; add vanilla.

  2. Sift flour and baking powder, add almonds.

  3. Mix sour cream and milk together.

  4. Fold flour and milk mixture into butter mix.

  5. Spoon half batter into paper-lined 23cm round pan; top with plums and then remaining batter.

  6. Bake at 160oC for 1 hour – 1 hour 10 minutes, until cooked.

  7. Serve with yoghurt mixed with some lemon zest.
