Creamed Potatoes

Serves 4 people

Ingredients

  • 4-5 russet or red skinned potatoes, peeled if desired, but unpeeled is fine.
  • 1 small onion, chopped
  • 1/2 cup butter
  • Salt and pepper to taste
  • 1/2 to 1 cup half and half

Directions

  1. Peel (if desired) and dice potatoes into 1 inch cubes. Chop onion. Mix onions and potatoes and place in a greased casserole dish. Add salt and pepper to taste. Dot with butter. Bake at 350 degrees for 45 minutes. Stir potatoes and pour enough half and half to cover potatoes and bake another 15 minutes.
