Quinoa tabbouleh

Ingredients

  • Large bunch parsley, 3 chopped tomatoes, 5 Mint leaves chopped, 1/2 onion chopped, 1 spring onion chopped, 1/3 Cup quinoa, Juice of 1 lemon, Pepper, olive oil, 1/2 tsp dry mint, 1/4 tsp cayenne

Directions

  1. Cook quinoa in 2/3 cup water. Bring to the boil, cover and reduce heat to a simmer. Approx 15 min. Meanwhile Chop parsley, mint, tomato and onions and place in a bowl. Add herbs, oil and lemon juice. Mix in quinoa when cooled.
