Bubble and squeak cakes

Ingredients

  • 25g butter
  • 1 medium onion, finely chopped
  • 450g cooked potatoes, roughly chopped
  • 150g cooked spring greens or dark cabbage, shredded
  • groundnut or olive oil, for shallow frying

Directions

  1. Heat the butter in a frying pan over a medium-low heat. Add the onion, cook for 7 minutes, until softened but not browned, then set aside to cool.

  2. Put the potatoes and greens in a large bowl and add the softened onion. Season generously and stir to combine. Form into 6 cakes with your hands, compacting the mixture well to prevent it falling apart.

  3. Put a large frying pan over a medium heat. Add the oil and fry the bubble and squeak cakes for a few minutes on each side, until golden and brown. Drain on kitchen paper and serve piping hot.
