Chilli Con Carne

Serves 6 people

Ingredients

  • 1 tbsp oil
  • 2 large onions
  • 1 capsicum
  • 2 garlic cloves
  • 1 heaped tsp hot chilli powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1kg lean minced beef
  • 1 cup beef stock
  • 2 cans chopped tomatoes
  • 1/2 tsp dried marjoram
  • 2 tubs tomato purée
  • 2 cans red kidney beans
  • Optional: 2 squares dark chocolate

Directions

  1. Chop onions, capsicums

  2. Fry onion, capsicum and garlic in oil until onions are translucent

  3. Add spices

  4. Add mince and brown

  5. Add stock, canned tomatos, tomato paste and chocolate (if using)

  6. Bring to boil, turn heat down and simmer with lid on for 20 min to 1 hour (longer is better)

  7. Drain and rinse kidney beans, add to pot

  8. Bring back to boil, then let cook without lid for 10-20 min

  9. Turn heat off and let stand for 10 minutes before serving
