Nan-e Barbari Bread

Ingredients

  • 1 tbsp dry yeast
  • 3 cups warm water
  • 1 tsp sugar
  • 1 tbsp sesame seed
  • 1 tsp salt
  • 6 cups flour
  • 4 tbsp oil
  • 1/2 cup cornmeal

Directions

  1. Dissolve yeast in 1 cup water with sugar.

  2. Add 2 cups water and salt.

  3. Add flour and knead

  4. Oil and leave to rise 4 hours

  5. Punch air out and leave to rise again.

  6. Preheat oven to 260C

  7. Divide dough into 11 parts. Sprinkle top with sesame.

  8. Bake on cornmeal dusted trays 8 mins.

  9. Flip and bake for 4 mins.
