Warm Aubergine Salad

Ingredients

  • 2 aubergines
  • 20ml oil
  • sea salt
  • 3 large tomatoes
  • 3 cloves garlic
  • 2 tsp paprika
  • 1/2 tsp cumin
  • 1 red chilli
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 20ml lemon juice
  • 20ml red wine vinegar
  • pepper
  • 3 tbsp fresh parsley
  • 3 tbsp fresh coriander

Directions

  1. Roast 1cm aubergine slices at 200C 30 mins.

  2. Fry everything else for 10 mins.

  3. Remove from heat and add juice, vinegar, aubergine and herbs.
