Pear and Cardamom Parkin

Ingredients

  • 250g dried pears
  • 300ml apple/pear juice
  • 4 tsp cardamom pods
  • 225g treacle
  • 225g golden syrup
  • 115g marg
  • 350g plain flour
  • 1/2 tsp baking soda
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 115g light brown sugar
  • 350g oatmeal

Directions

  1. Grease 20cm square cake tin.

  2. Simmer pears in juice.

  3. Grind cardamom seeds

  4. Mix.

  5. Bake at 160C 1 1/4 hours
