GF Banana Bread

(from jdsandelman’s recipe box)

Ingredients

  • 1 cup (usually about 3) SUPER ripe bananas, mashed up
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cups gluten-free flour
  • 2/3 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda

Directions

  1. Beat wet ingredients together for a bit, then set aside.

  2. In another bowl mix dry ingredients together

  3. Next add the dry mixture into the banana, oil and egg mixture a little bit at at time. Pour into the greased bread pan.

  4. Bake at 350 for 55 – 60 minutes.

  5. Let the loaf cool on a wire rack for 10 minutes before removing it from the pan.
