Garam Masala Chickpeas on Jasmine Rice

Ingredients

  • jasmine rice
  • olive oil
  • 2 tbsp garam masala
  • 1-2 tsp dried chili flakes
  • 14-oz can chickpeas, drained
  • 14-oz can tomatoes
  • 2-3 tbsp cream

Directions

  1. Cook rice according to package directions.

  2. Meanwhile, heat a few tbsp of olive oil.

  3. Cook garam masala and chili flakes over medium-high heat for 30 seconds.

  4. Add drained chickpeas; cook for 1 minute.

  5. Add tomatoes and bring to a fast simmer.

  6. Cook for 5 minutes, stirring occasionally and breaking up tomatoes.

  7. When the sauce has reduced a little, stir in the cream.

  8. Serve over rice.
