Cheese Beignets

Serves 12 people

Ingredients

  • 4 T butter
  • 1/2 C water
  • 1/2 C flour
  • 2 large eggs
  • 1 t prepared mustard
  • 1/2 t salt
  • 3/4 C parmesan or other cheese, grated
  • 1 t worcestershire sauce
  • 1 dash hot sauce
  • Oil for frying

Directions

  1. Bring water & butter to a boil.

  2. Remove from heat and stir in flour, all at once. Stir until thick.

  3. Return to heat and stir constantly until mixture forms a smooth, shiny mass. Remove from heat.

  4. Beat in eggs, one at a time, mixing thoroughly.

  5. Add remaining ingredients.

  6. Drop by teaspoonfuls into hot oil. Fry, turning several times, until golden. Drain.

  7. Can be kept in 250 degree oven for ½ hour to keep hot.

  8. Can use other types of cheese, add chopped/dried herbs, or different types of mustard. Be creative depending on the type of cheese you choose.

  9. Serve hot.

  10. Yield: 24 or so
