Butternut Squash Taco Filling

Ingredients

  • 2 lb butternut squash
  • 1 lg onion, halved and sliced
  • cumin
  • oregano
  • chili powder
  • salt
  • cinnamon (yes!)

Directions

  1. Carefully peel squash; cube.

  2. Toss with olive oil, seasonings.

  3. Add onions.

  4. Roast 425/25-35 min
