Bean and Salsa Dip

Ingredients

  • 1 pound lean ground beef
  • 1/2 teaspoon salt
  • 1 tablespoon chili powder
  • 1/8 teaspoon cayenne
  • 5 cloves garlic, crushed
  • 2 (16-ounce) jars salsa
  • 1 (15-ounce) can refried beans
  • 1 1/2 cups low-fat sour cream
  • 2 cups plus 1/2 cup shredded cheddar cheese

Directions

  1. Brown the beef in a medium-sized skillet

  2. Drain off the grease

  3. add salt, chili powder, cayenne, and garlic

  4. Cook for 2 more minutes

  5. In your slow cooker, combine the beef mixture with the salsa, refried beans, sour cream, and 2 cups of the cheddar cheese

  6. Cover and cook on low for 2 to 3 hours

  7. Fifteen minutes before serving, sprinkle the remaining cheese on top

  8. Keep the cover off and continue cooking on low to keep the bean dip warm

  9. Serve with tortilla chips

  10. Makes approximately 8 cups
