Oatmeal Apple Pancakes

Ingredients

  • 1 small apple (you can use a tbsp of lemon juice to keep from browning if you need)
  • 1/2 cup flour
  • 1/2 cup quick cooking oatmeal (run through a food processor)
  • 2 tbsp white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla
  • 3/4 buttermilk or regular milk (remember you can make buttermilk with lemon juice and regular milk)
  • 2 tsp oil
  • 1 large egg
  • 1 tsp oil
  • 2 tsp butter

Directions

  1. Peel and core and apple, cut in thin slices. Sprinkle with lemon juice if you are worried about browning.

  2. Mix flour, oatmeal, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl. Add vanilla, buttermilk, oil and egg. Mix until well blended. You can do this in a food processor if you like.

  3. Heat butter and oil in a frying pan over medium high heat. Place 1/4 cup of batter into pan and place slices of apples on top. When you see bubbles, flip like regular pancakes. Mine looked very runny, but it worked fine.

  4. Serve with butter and syrup.

  5. Makes 6 quarter cup pancakes.
