Sticky Date Cake

Ingredients

  • 1 1/2 C dates, chopped and pitted
  • 1 1/2 C water
  • 3/4 t bicarbonate of soda
  • 75 g butter, chopped and at room temperature
  • 3/4 C brown sugar, firmly packed
  • 2 eggs
  • 1 1/4 C self raising flour
  • Caramel frosting:
  • 3/4 C thickened cream
  • 150 g Jersey caramels

Directions

  1. Place dates and water in small saucepan; bring to boil.

  2. Remove from heat; stir in soda, and cool.

  3. Process cooled mixture until smooth.

  4. Beat butter and sugar until pale.

  5. Add eggs, singly until combined.

  6. Stir in flour and date mixture.

  7. Pour into paper-lined 20cm cake pan; cook at 180oC approx 25 minutes.

  8. Stand in pan 5 minutes before turning onto rack to cool.

  9. Frosting:

  10. Combine cream and caramels in medium saucepan.

  11. Stir over low heat until caramels are dissolved and mixture is smooth; pour into medium bowl and cover surface with plastic wrap.

  12. Refrigerate until cold; beat with mixer until light and fluffy.

  13. Spread frosting over top of cooled cake.
