Spicy sweet potato wedges

These peppery-sweet potatoes are delicious with roasted meats. Cooking them at high heat makes their interior tender just as the sugar-and-spice coating begins to caramelize and brown the outside.

Ingredients

  • 6 sweet potatoes (about 2 1/2 lbs)
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground red pepper
  • 1/4 tsp black pepper
  • cooking spray

Directions

  1. Preheat over to 500 degrees F.

  2. Peel potatoes and cut length-wise into quarters.

  3. Place in large bowl and coat with cooking spray.

  4. Combine sugar, salt, and peppers and springkle over potatoes, tossing well to coat.

  5. Arrange potatoes, cut side down, in a single layer on a baking sheet.

  6. Bake at 500 degrees F for 10 minutes, then turn wedges over, and bake an additional 10 minutes or until tender and beginning to brown.
