Rösti with smoked salmon, cream cheese and chives

Par-boil the potatoes the day before, then cool and chill overnight, bring back to room temperature then peel etc.

Ingredients

  • 3 medium waxy potatoes, such as Desirée, unpeeled
  • flour, for dusting
  • 50g butter
  • 1 tbsp vegetable oil
  • 150g cream cheese
  • handful of fresh chives
  • 125g smoked salmon slices
  • 1 lemon, quartered, to serve

Directions

  1. Make the rösti. Par-boil the potatoes for 8 minutes. Drain and run under cold water. Peel the skin off with your fingers and coarsely grate each potato into a bowl. Season and shape into 4 rösti with craggy edges. Dust with a little flour.
  2. Melt the butter with the oil in a wide frying pan over a medium heat. When hot, add the rösti and cook for 10 minutes, turning halfway, until crispy. Transfer to serving plates.
  3. Meanwhile, put the cream cheese in a bowl and stir until smooth. Snip in most of the chives with scissors, season and mix together.
  4. Top each rösti with smoked salmon and a big spoonful of cream cheese. Garnish with the rest of the chives and serve with a lemon quarter.
