Griddled chicken with spiced tomato couscous

Ingredients

  • 2 chicken breasts, skin on
  • 1 tbsp curry paste
  • juice of half a lime
  • 150g couscous
  • handful of cherry tomatoes, quartered
  • mint leaves, to garnish
  • tzatziki, to serve

Directions

  1. Heat a griddle pan, then add the chicken – skin side down – and cook for 10-12 minutes, turning once. Meanwhile, measure out 200ml boiling water and stir in the curry paste and the lime juice. Pour the water over the couscous and set aside for 5 minutes. Mix in the tomatoes. Divide the couscous between 2 plates, place a chicken breast on top and garnish with mint leaves. Serve with tzatziki on the side.
