Coconut Bread

Ingredients

  • 6 eggs
  • 1/2 cup Virgin coconut oil
  • 2 tbsp. honey (optional)
  • 1/2 tsp. salt (optional)
  • 3/4 cup sifted coconut flour
  • 1 tsp. baking powder

Directions

  1. Blend together eggs, oil, honey and salt.

  2. Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps.

  3. Pour into greased 9×5×3 inch or smaller loaf pan and bake at 350 degrees for 40 minutes.

  4. Remove from pan and cool on rack.
