Crepe Tower

Ingredients

  • crepes
  • 1 pk fzn chopped spinach - (10 oz)
  • 1 garlic clove minced
  • 2 tablespoons olive oil
  • 1/2 cup slivered smoked ham
  • 1 Recipe bechamel
  • 1 cup ricotta cheese mixed with 1 egg
  • 1/2 cup slivered roasted peppers
  • 3 tablespoons grated Parmesan cheese

Directions

  1. Cook the spinach in 2 tablespoons olive oil oil along with the minced garlic and if desired the slivered ham or Proscuitto.

  2. Lightly butter a 9-inch deep pie plate and center a crepe in the bottom.

  3. Top with spinach filling and 1/2 cup of the bechamel.

  4. Center a crepe on top of spinach filling and spread it with ricotta cheese and pepper filling.

  5. Repeat until you end with a crepe.

  6. Spoon cheese sauce over the top of the tower and sprinkle with grated Parmesan. 325/30 min
