Sweet Beet Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 fresh medium beet
  • 2 tbsp canola or vegetable oil

Directions

  1. eheat oven to 400.

  2. Place the flour, baking powder, sugar and salt in a large bowl and stir to combine.

  3. Peel the beet and shred with a fine grater.

  4. Add 1/2 cup of the shredded beet to the flour mixture; coat the beet pieces with flour.

  5. Add the oil and knead for 2 to 3 minutes until a dough is formed.

  6. Roll to 1/4 inch thick and cut into shapes.

  7. Bake for 15-17 minutes or until firm to the touch.
