Fish Soup

Ingredients

  • 1/2 c chopped onions
  • 6 c stock
  • 3 TB soy
  • 1 t pepper
  • 1 c peas
  • 3/4 lb white fish filet (or ground beef)
  • 2 TB cornstarch
  • 2 egg whites, lightly btn
  • chopped cilantro or kale or spinach

Directions

  1. Saute onion 10 just til brown.

  2. Add all but 1/4 c stock, then soy, pepper, peas, fish.

  3. Simmer gently 5-10 min.

  4. Combine cornstarch w/1-4 c stock.

  5. Add egg whites to soup, stirring.

  6. Add cornstarch, stirring.

  7. When thick, add greens.
